Sara Devetak arbeitet mit der Unterst\u00fctzung ihres Mannes Pavel als Landwirtin in San Michele del Carso. Sara wusste nicht immer, dass dies ihr Beruf sein w\u00fcrde. An der Universit\u00e4t studierte sie Sprachen. Sie kehrte zum Karst zur\u00fcck \u2014 und zu den Bienen \u2014 dank ihres Gro\u00dfvaters, einem Landwirt mit tiefer Leidenschaft f\u00fcr die Natur, der ihr beibrachte, keine Eile zu haben, geduldig zu sein und Leidenschaft in alles zu stecken. \u201eLass etwas f\u00fcr morgen \u00fcbrig\u201c, wiederholte er immer. Dieser Satz wurde zu einer Arbeitsphilosophie. <\/p>

Die Marasca-Kirsche (Prunus mahaleb) \u2013 die Wildkirsche des Karsts \u2013 produziert einen seltenen Nektar mit unverwechselbarem Aroma, den Bienen w\u00e4hrend ihrer kurzen Bl\u00fctezeit im Fr\u00fchling sammeln. Das Ergebnis ist Honig, ein Slow-Food-Presidio, von einer Pflanze, die in der Karstregion w\u00e4chst. Ist der Fr\u00fchling kalt und regnerisch, bleibt die Bl\u00fcte aus und es wird kein Honig produziert. Honig ist kein Supermarktregal. Nur wenn man akzeptiert, dass nicht alle Honigsorten jedes Jahr verf\u00fcgbar sind, kann man die Rhythmen der Natur wirklich respektieren. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t

Saras und Pavels Bienen wachsen in einer naturnahen Umgebung, fernab von intensiver Bewirtschaftung und ohne den Einsatz von Chemikalien. Ihre Aufgabe ist es, optimale Bedingungen f\u00fcr ihr Gedeihen und Fliegen in einem sauberen Gebiet zu schaffen. Die Bienenst\u00f6cke werden keinen Praktiken unterzogen, die das Wohlbefinden der V\u00f6lker gef\u00e4hrden. Den Bienen wird ihr Honig nicht weggenommen, wenn nicht gen\u00fcgend vorhanden ist. Dieser Ansatz hat eine Bedeutung, die weit \u00fcber die reine Produktion hinausgeht: Bienen sind pr\u00e4zise Indikatoren f\u00fcr die Gesundheit eines \u00d6kosystems. Sind die Bienen gesund, ist auch der Karst gesund. <\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t

Hinter diesem Projekt steht eine \u00fcber 150-j\u00e4hrige Familiengeschichte. Seit 1870 betreibt die Familie ein Restaurant und ein traditionelles Gasthaus und arbeitet dabei im Einklang mit den Jahreszeiten, der Natur und all ihren Gaben. Heute bem\u00fchen sich vier Schwestern, die zusammen mit ihren Eltern die Traditionen und die Kultur dieser Region zu bewahren. Wenn man ein Glas ihres Honigs \u00f6ffnet, sagt Sara, entfaltet sich eine ganze Region. Darin findet man sie selbst: ihre Familiengeschichte, ihre Hingabe, ihre Sorgfalt.
